This simple marinade is perfect to use on vegetables, chicken, tofu, and just about anything else you might want to throw on the grill or bake in the oven. It has just enough garlic to influence the flavor without overpowering the dish.
10 peeled cloves of garlic
1/2 cup extra virgin olive oil
3 tbs apple cider vinegar
1 tbs chili powder
1 tsp honey
freshly ground black pepper to taste
1) Combine garlic and olive oil in a small food processor and process until garlic is thoroughly minced. Add remaining ingredients and continue blending until thoroughly mixed. Use a flexible spatula to transfer the marinade to a large, nonmetallic, flat basting or baking dish.
2) Thoroughly coat both sides the food to be marinated. Cover the dish and place it in the refrigerator for at least 2 hours. Grill marinated pieces on a charcoal or gas grill and subsequently enjoy a taste delight.
